BAJACALIFORNIA CHEF WILL REPRESENT MEXICO IN A WORLDWIDE GASTRONOMIC CONTEST
Marcelo Hisaki, originally from Tecate, got the pass to the final in the "Best theme on a Plate" category.
SANTIAGO DE CHILE.- Chef Marcelo Hisaki, creator of the Amores Restaurant, located in the magical town of Tecate, reached the final of one of the most relevant gastronomic contests worldwide, Bocuse d'Or Américas, as reported by the head of the Secretary of Tourism, Miguel Aguiñiga Rodríguez.
The Governor of Baja California, Marina del Pilar Avila Olmeda, publicly congratulated the chef's triumph, who has managed to represent the Mexican country, highlighting his effort, dedication and support in this important contest.
Bocuse d'Or Americas is an international cooking competition, popularly known as the Gastronomy Olympics, which brings together the best chefs in the Americas from Guatemala, Canada, Colombia, Bolivia, the United States, Chile, Ecuador and Mexico.
The national team was headed by Chef Marcelo Hisaki, 32, positioning himself among the finalists, after competing with the best specialists from all over the country since 2019, and getting the pass to the grand final that will take place in January. 2023 in Lyon, France.
Each candidate participated with the support of his assistants, so the Mexican team is also made up of Alexis Collazo, originally from the Baja California entity.
The Mexican team had five hours to prepare a vegetarian recipe – named Assiette –, where aspects of presentation and flavor were evaluated; which in turn has to be accompanied by some broth or sauce. While for their second test - named Plateau -, the candidates made a salmon dish in a time of five hours and 35 minutes.
The tastings of dishes began at 2:00 p.m. (Chilean time), which were evaluated by a "Jury of Honor" made up of Rodolfo Guzmán, Honorary President, Bastián Salas, President of the Bocuse d'Or Americas 2022, David Tissot, Bocuse d'Or 2021 and President of the jury. In addition to having the presence of the "Cooking Jury", headed by Mateo Pedros, champion of the Bocuse de Oro 2017 and Sebastián Gibrand, winner of the Bocuse de Plata 2019; who rated the technical aspects, compliance with rules and issues of the contest.
